Sweet Potato Side dish for Holiday dinner
Orange Liqueur Sweet Potatoes
5 sweet potatoes/yams
1/2 cup honey
1 stick melted butter
1 teaspoon ground cardamom
1 1/2 teaspoon ground cinnamon
1/4 cup tangerine (or orange) juice
3 tablespoons orange liqueur
Preheat an oven to 425 degrees F. Scrub, peel and dry the potatoes, then prick several times with a fork and place onto a baking sheet.
Bake in the preheated oven until the potatoes are easily pierced with a fork, about 1 hour. Remove and allow to cool briefly.
Cut the ends off the yams and discard; transfer the potatoes to a large bowl.
Add the honey, melted butter, cardamom, cinnamon, tangerine/orange juice, and orange liqueur to the potatoes.
Beat with a hand-held electric mixer until combined.
Add some sliced orange to garnish.[optional]
